Dr. Sarah Greve's research focuses on the metabolic adaptation to diverse dietary regimens, with a particular emphasis on the role of the liver and adipose tissue in these processes. In the context of dietary intervention studies, predominantly employing mouse and pig models, she integrates detailed in vivo phenotyping with contemporary molecular profiling techniques ("omics" approaches), to delineate the physiology and metabolism of the organism. This includes comprehensive analyses of gene expression, metabolites, and lipids, as well as measurements of energy balance, tissue function, and body composition. A particular focus of her research is on the influence of bioactive nutrients, omega-3 fatty acids, and transport proteins for hydrophobic molecules on lipid and glucose metabolism as well as inflammatory processes. In addition, she examines the role of these factors in the development of obesity, associated metabolic diseases, and longevity.
